The second category of Belgian beer includes Witbier and Saison, two styles featuring characterful fermentations and spicy flavor profiles. In the case of Witbier, these spicy flavors result from the addition of coriander to the brew. With Saison, spicy notes arise from the use of a unique yeast strain.
